We work daily with fresh fish from far and near. We buy from small boats that have been at sea for only one day, which ensures that the fish is fresh on the same day. Our fish specialists fillet everything themselves, so they have personally handled every fish and inspected it for quality. Our specialties are also carefully selected—from smoked salmon from Rokerij de Zalm, which we believe is the tastiest, and smoked mussels from Frank’s Smokehouse to beautiful French specialty Geay oysters.
