For many hospitality establishments, the hamburger is an indispensable part of the menu. At Driessen Food, we have made it our mission over the past period to develop the ultimate hamburger. The result is a hamburger with a light, fairly coarse texture and a perfect balance between juiciness and firmness. The hamburger as it was meant to be. We are proud that we have now succeeded in this.
Coarse Texture
This texture is thanks to the equipment we work with. The operation of our new hamburger machine is comparable to that of a traditional butcher’s meat grinder. The meat is coarsely ground and immediately formed so that all the fibers remain aligned in the same direction. This results in the coarse, airy texture you can expect from an artisanal burger.
Success Factors of a Hamburger
The success factors of a good hamburger lie in several aspects: achieving the perfect grind—not too coarse and not too fine. We normally grind to 4.5 mm because that ensures the right coarse texture. The meat must be as cold as possible and handled as little as possible. By cutting the minced meat directly after it comes out of the grinder into patties, all the fibers remain aligned. The hamburger only needs to be carefully pressed a bit flatter. Thanks to this structure, the hamburger retains its round shape, and very little weight is lost.
The Foundation
A good beef hamburger requires quality beef. We have chosen meat from the MRIJ cattle. This meat has the ideal muscle-to-fat ratio of 80/20. In addition, it is sustainably Dutch beef. This burger is also the tastiest when prepared to perfection. Besides a natural variant, we also offer an American-style burger made with herbs, sauce, and scallions according to our own recipe.
Assortment
In addition to beef hamburgers, we also offer a veal burger and, seasonally, lamb and venison burgers. It is also possible to have burgers produced according to your own recipe, based on another type of (beef) meat and/or herbs.
