Normally, you receive an “ode to” from us every month. Unfortunately, it is not possible to visit you now. Instead, over the coming period we want to share experiences with each other. In this first newsletter, an ode to….

Brasserie le Nord in Bilthoven

We had a telephone interview with Lieke Nicole-Creemers, Operations Manager and the wife of head chef Gregory Nicole.

Brasserie Le Nord has a BIB Gourmand, 13 Gault Millau, a Lekker 500 mention and serves classic French dishes in a rural setting with a modern twist.

What have you all been doing since March 15?

Thanks to Gregory’s previous catering experience, we were able to react quickly and offer a take-away menu to our guests on March 17. The tableware was replaced with take-away materials, and we put together a nice menu after consulting with our suppliers.

How do you manage home delivery/pick-up?

We offer a weekly 3-course choice menu so that our guests have options. If there are allergies or other requests, that is always negotiable. In addition to the menu, we also offer matching wines. By limiting the menu, we can better control costs and avoid food waste.

How do your guests respond?

They respond very positively! They are happy that we are open – we were the first to offer take-away – and that they can create a restaurant experience at home. We receive feedback via social media from people who dress smartly, set the table beautifully, and enjoy together. That’s what we do it for.

How do you experience our collaboration?

Since the beginning of our collaboration, we have been satisfied. There was immediate contact after the news that the hospitality industry had to close, so we could quickly adjust the menu. Even though Driessen Food now delivers on fewer days, there is still a lot of cooperation and good communication.

Advice and/or tips?

Standing still is not an option for Le Nord! We are already thinking ahead about what we can do when our restaurant and/or terrace reopens. It is also important to stay visible to your target audience and keep in touch with your guests, so that they know where to find you when the time comes.
