Nieuws: Spring in full swing: from mousserons to lamb racks

Spring is in full swing, and you can see it reflected in our offerings. From unique mushrooms to special leafy greens: this week is all about refinement, surprise, and freshness. Our specialists keep a close eye on the market. What’s coming up, what’s at its peak, and where should you act quickly? Read the latest developments below.

Fish: limited availability around Easter

Please note that seafood supply will be reduced over the long Easter weekend.

  • From Saturday through Tuesday, there will be little to no fresh catch available at the auction.

  • After King’s Day, we expect a stable supply again.

  • Increased availability of red mullet, grey gurnard, and greater amberjack is anticipated then.

Our advice: order in advance and stay in close contact with your account manager for real-time availability.

Produce: exceptional flavors from local fields

There’s a lot to report this week in fruits and vegetables:

  • Okinawan cherry leaves from Stadsjochies are now on sale! We’re extending the offer for one more week for extra exposure. Grown on open ground, and you can taste the difference.

  • The first spring mushrooms have arrived. The mousserons are truly stunning this season.

  • New in our range: the St. George mushroom – pricey, but a showstopper on the plate.

  • Baby carrots straight from the grower – the finest Holland-grown, with crisp, fresh tops.

  • Wild garlic is now perfectly priced and top quality. Soon also available: wild garlic tips and wild garlic blossoms.

  • Time for something other than red: we now have brown cherry tomatoes, plus the exclusive brown cherry plum tomatoes (4813). Limited availability, so act fast!

Meat: spring classics in full swing

Availability of lamb is increasing rapidly. The racks are in high demand, and lamb saddles 1 rib are readily available. From Christoffels, we offer lamb stew or lamb curry. Lamb is becoming expensive, but these products help you create a standout dish with solid margins.

Additionally, we have an excellent stock of Dutch dry-aged ribeyes, perfectly aged and with superb texture.
